Mini Cinnamon Spiced Banana Bread

Warm up this cold winter with our lovely Cinnamon Spiced Banana Bread, sugar free of course.
Ingredients
- 125g self-raising flour
- 1/2 tsp baking powder
- 2 tsp ground cinnamon
- 50g melted butter
- 1 egg
- 1 tbsp of milk
- 3 medium ripe bananas
- 2-3 smidgens of Sweetia (depending on banana ripeness)
Directions
- Step 1 Preheat oven to 180C / 160C (fan) / gas mark 1.
- Step 2 Take your 400g loaf tin, grease well and line with baking parchment paper.
- Step 3 Weigh the self-raising flour, baking powder and cinnamon into a bowl and mix with a wooden spoon.
- Step 4 Melt the butter on a low heat, once melted add Sweetia to the butter and allow to dissolve.
- Step 5 While the butter is cooling, add the egg, milk and mashed bananas in to a separate bowl, then add the melted butter and whisk.
- Step 6 Pour the ‘wet’ banana mixture to the dry ingredients, mix thoroughly with a wooden spoon.
- Step 7 Pour the mixture into the prepared tin and bake for 20-22 mins or until a skewer inserted in the middle comes out clean.
- Step 8 Remove from the oven, allow to cool in the tin for 10 mins then turn out.
- Step 9 Slice and enjoy with your favourite beverage.
